Artichoke, Ham and Fresh Bean Salad Directions
984 kilojoules/ 235 calories per serving 300g (10oz) fresh green beans 6 artichoke hearts, halved 155g (5oz) ham, finely sliced into strips 2 tblspn finely chopped red capsicum (pepper) 10 walnut pieces 2 tspn walnut oil 1 tblspn freshly squeezed lime juice Sprig of Italian parsley
1. Top and tail beans and cut into 2cm (Â¾ in) Lengths. Bring a large saucepan of water to the boil, add beans and cook for 1 minute. Remove with a slotted spoon and refresh under cold water.
2. Combine the beans with the artichoke hearts, ham, red capsicum and walnuts.
3. Arrange salad on serving plate and dress with combined walnut oil and lime juice. Garnish with fresh parsley if desired.
