Smoked Chicken and Watercress Salad with Croutons Directions
963 kilojoules/ 230 calories per serving 1 Â½ tblspn lite margarine 2 cloves garlic, crushed 4 slices bread, crusts removed 2 cups watercress sprigs 1 Â½ cups smoked chicken, torn into bite-size pieces 2 tblspn low-joule French dressing
1. Melt the margarine in a small frying pan over moderate heat. Add the garlic and cook for 1 minute.
2. Cut each slice of bread into 9 squares and add to the frying pan. Cook on both sides until light golden brown, drain on absorbent paper.
3. Arrange the watercress and chicken pieces on a serving plate. Pour over French dressing and toss gently.
4. Arrange croutons on top and serve immediately.
