Oriental Beef Salad Directions
1256 kilojoules/ 300 calories per serving 2 tspn oil 1 red capsicum (pepper), seeded, cut into thin strips 1 green capsicum (pepper), seeded, cut into thin strips 2 leeks, trimmed and finely chopped 1 tblspn oil, extra 1 tblspn honey 2 tblspn soy sauce 625g (1lb 4oz) beef eye fillet, cut into strips 1 tspn sesame seeds
1. Heat the oil in a large frying pan, over medium heat. Add the red and green capsicum and the leeks and fry for 2 minutes. Remove with a slotted spoon and set aside.
2. Add the extra oil, honey and soy sauce to the frying pan and heat.
3. Add the beef and cook for 3 minutes, or until cooked through, stirring constantly.
4. Stir in sesame seeds and reserved vegetables, serve immediately.
