Chicken Pieces with Mushrooms and Basil Directions
963 kilojoules/ 230 calories per serving 1 tblspn olive oil 4 chicken breast fillets, cut into strips 1 tblspn butter 2 leeks, sliced, white part only 1 cup button mushrooms, sliced Â½ cup drained and sliced sun-dried tomatoes 2 tblspn red wine vinegar 3 tblspn freshly squeezed lime juice Â½ tspn chopped fresh chilli 1 tblspn chopped red or green basil 1 tblspn chopped Italian parsley
1. Heat the oil in a large frying pan over a moderate heat, add the chicken pieces and cook for 3 minutes, stirring constantly. Remove chicken and keep warm in a low oven.
2. Add the butter to the pan, then add the leeks, mushrooms, sundried tomatoes, red wine vinegar, lime juice, chilli, basil and parsley, cook for 3 minutes.
3. Return the chicken pieces to the frying pan, toss well. Serve immediately and garnish with fresh basil.
