Baked Chicken Pieces with Orange Sauce Directions
1403 kilojoules/ 335 calories per serving 1 tblspn butter 3 chicken Marylands, skin removed, broken into pieces Â½ cup sweet white wine Â½ cup freshly squeezed orange juice Â½ orange, cut into thin slices Â¼ cup apple juice 2 tblspn freshly squeezed lime juice 1 tblspn honey
1. Heat the butter in a large frying pan over moderate heat. Add the chicken pieces and cook for 4 minutes, stirring constantly.
2. Remove chicken, place in a baking dish and cook in a moderate oven for 20 minutes or until cooked through.
3. Meanwhile, add the wine, orange juice, oranges, apple juice, lime juice and honey to frying pan and bring liquid to the boil, reduce heat and simmer for 5-7 minutes or until sauce thickens slightly.
