Garlic Goatâ��s Cheese Toasts Directions
795 kilojoules/190 calories per serving 8 radicchio leaves, washed and dried Â½ cup cherry tomatoes, halved 1 cup watercress 8 slices bread, crusts removed 2 tspn crushed garlic 100g (3Â½oz) goatâ��s cheese 50g (1Â¾oz) Philadelphia light cream cheese Â½ tspn cracked black pepper
1. Arrange lettuce, tomatoes and watercress on 4 serving plates.
2. Toast the slices of bread on each side. Spread the crushed garlic very lightly on one side of each toast.
3. In a medium bowl, combine the goatâ��s cheese, cream cheese and pepper, mix until smooth.
4. Spread each slice of toast with the cheese mixture and grill under low heat until cheese begins to brown.
5. Cut each slice into 2 triangles and divide toasts between the four plates of salad. Serve immediately.
