Caramelized onions, feta and rocket combo Directions
This is another favourite combination of ours: rich caramelized onions, salty feta and peppery rocket leaves. It�s excellent with penne or orecchiette. 4 tbsp olive oil 4 onions, sliced 2 garlic cloves, peeled 1 small red chilli, halved, optional 2 springs fresh thyme Salt and freshly ground black pepper 125g (4oz) feta, crumbled 125g (4oz) rocket, washed and chopped Pasta of your choice, 100g (3½ oz) dried
Heat oil in saucepan, add onions, garlic, chilli (if using) and thyme. Season well. Cook for 20-30 minutes on low heat, stirring often until onions soften and turn a golden caramel colour.
Bring a large pot of water to a boil over a high heat. Add a good pinch of salt. Add pasta to boiling water and stir until water has returned to the boil. Reduce heat, cover and cook pasta at a fast simmer for 8 minutes.
Drain excess oil away from onion. Toss with feta, rocket and cooked drained pasta. Serve immediately. Serve 4.
