293 kilojoules/70 calories per serving 1 tspn lite margarine 3 leeks, sliced 1 onion, peeled and sliced 2 large potatoes, peeled and chopped 4 cups degreased chicken stock Â½ cup non-fat skim milk 1 tblspn chopped fresh chives
1. Melt the margarine in a large saucepan over a medium heat. Add the leeks, onion and potatoes and cook for 3 minutes, stirring constantly.
2. Pour in the stock and bring to the boil, reduce heat and simmer, covered, for 30 minutes
3. Place mixture and skim milk into a food processor or blender and process until smooth. Refrigerate for 3 hours and serve in chilled bowls, garnished with chives.
