Endive and Snowpea Salad Directions
251 kilojoules/ 60 calories per serving 200g (6Â½oz) fresh snowpeas 1 curly endive, leaves torn into bite-size pieces 1 orange, sliced and cut into small wedges 3 tblspn freshly squeezed orange juice 2 tspn finely grated orange rind 1 tblspn freshly squeezed lime juice 1 tblspn olive oil 2 tspn finely chopped fresh parsley Â¼ tspn cracked black pepper
1. Bring a medium saucepan of water to the boil, add the snowpeas and cook for 30 seconds. Remove with a slotted spoon and refresh under cold water.
2. Arrange the endive leaves, snowpeas and orange slices in salad bowl and dress with combined orange juice, orange rind, lime juice, olive oil, parsley and pepper.
