Gazpacho Directions

357 kilojoules/85 calories per serving ½ onion, roughly chopped ½ cucumber, peeled and seeded ½ green capsicum (pepper), seeded and roughly chopped Clove garlic, crushed 1 tblspn chopped coriander 1½ cups ltalian peeled tomatoes 1 cup tomato puree 1 tblspn red wine vinegar 1 tspn lemon juice ¼ tspn Tabasco sauce 1 stick celery, shopped, for garnish

1. Place all ingredients, except celery, in a blender of food processor and blend for 30 seconds.

2. Chill soup before serving and garnish with chopped celery.
