Fish Stock Directions
21 kilojoules/5 calories per serving 500g (1lb) fish bones from white fleshed fish 1 onion, sliced 1 stalk celery, sliced 6 stalks parsley Â¼ cup chopped mushrooms 2 cups white wine 12 cups water
1. Rinse fish bones under cold running water, place in a large saucepan with remaining ingredients and bring to a bill.
2. Reduce heat, simmer, uncovered, for 25 minutes. Strain through a fine sieve. Allow to cool, cover, refrigerate to allow any fat to rise to surface. Remove fat.
