Mussels in Wine and Tomato Sauce Directions
502 kilojoules/120 calories per serving 1 tblspn lite margarine 1 large onion,chopped 4 cloves garlic, crushed 1 tblspn finely chopped red capsicum (pepper) 1 cup dry white wine 2 tblspn low-joule French Dressing 1 tblspn tomato paste 24 mussels, scrubbed and debearded 1 tblspn finely chopped fresh basil
1. Melt the margarine in a large frying pan over moderate heat. Add the onion and garlic, cook for 2 minutes.
2. Add the capsicum, wine, French dressing and tomato paste, cook for a further 1 minute.
3. Add the mussels, cover and simmer for 3-5 minutes or until the mussels open. Remove mussels with a slotted spoon, discard any that do not open.
4. Cook the sauce for a further 3 minutes, or until it thickens slightly. Stir in the basil and pour the sauce over the mussels, serve immediately.
