Spicy Bean and Vegetable Salad Directions
377 kilojoules/90 calories per serving 1 cup butter beans, rinsed and drained 2 zucchini (courgette), cut into thin strips 1 cup pimentos, drained, cut into strips Â¼ tspn cracked black pepper Â½ tspn sambal oelek (chilli paste) 1 tblspn olive oil 1 tblspn freshly squeezed lemon juice
1. Arrange the butter beans, zucchini strips and pimento strips on a serving plate.
2. In a small bowl, combine the cracked black pepper, sambal oelek, olive oil and lemon juice, mix well.
3. Pour over salad and garnish with fresh lemon slices and a spring of dill if desired.
