879 kilojoules/ 210 calories per serving 4 small wholemeal pocket breads 2 tblspn tomato paste Â½ cup sliced cherry tomatoes Â¼ cup black olives, pitted and cut into small strips 100g (3Â½oz) mozzarella cheese, cut into thin strips 2 tspn finely chopped parsley
1. Trim each pocket bread to make 4 small rounds of bread, about 10-12cm (4-5in) diameter. Toast one side of the bread rounds.
2. Spread the untoasted side with tomato paste, arrange tomato slices, olive strips and cheese in a wheel shape on top of the tomato paste.
3. Sprinkle parsley on top and bake in a moderate oven for about 7 minutes or until cheese has melted. Serve immediately.
