Cauliflower and Coriander Soup Directions
183 kilojoules/45 calories per serving 1tblspnlite margarine 1 onion, peeled and finely chopped 2cups cauliflowerets, cut into small pieces 1tblspn chopped fresh coriander 2 bay leaves 4 cups chicken stock Â½ Cup skim milk Â¼ tspn black cracked pepper
1. Melt the margarine in a large saucepan over a moderate heat. Add the onion and cook for 2 minutes, stir in the cauliflower, coriander and bay leaves, cook for a further 5 minutes, stirring constantly.
2. Add the stock, milk and pepper and bring to the boil. Reduce heat and simmer uncovered for 20 minutes.
3. Cool mixture slightly and puree in a food processor or blender until smooth.
4. Reheat soup before serving and garnish with fresh coriander.
