Salmon Frittata Directions
607 kilojoules/ 145 calories per serving 1 tblspn lite margarine 1 onion, chopped 2 spring onions (scallions), finely chopped Â½ green capsicum (pepper), seeded, finely chopped 1 leek, finely sliced, white part only 1 tomato, chopped 155g (5oz) smoked salmon, chopped 4 eggs Â¾ cup skim milk Â½ tspn cracked black pepper
1. Melt the margarine in a medium frying pan, add the onion, spring onions, capsicum and leeks, cook for 4 minutes.
2. Add the tomato and salmon, cook for 1 minutes, remove from heat. Cool mixture to room temperature.
3. Beat the eggs with the milk, add the pepper and stir the mixture into the cooled vegetable salmon mixture.
4. Pour mixture into a greased ovenproof 20cm (8in) flan dish and bake in a moderate oven for 25 minutes.
