Hot orange sabayon sauce Directions
2 egg yolks 1 teaspoon grated orange rind Â¼ cup sugar Â¼ cup orange juice Â¼ cup dry white wine
Combine egg yolks, orange rind and sugar in top of double boiler over simmering water. Beat mixture with rotary beater or electric mixer until pale in color. Gradually beat in orange juice and wine. Beat constantly until doubled in volume; serve immediately.
Makes about 2 cups.
