¼ cup sugar ¾ cup water 3 teaspoons cornflour 1 tablespoon lemon juice 1 cup fresh or frozen blueberries 30g butter ½ teaspoon cinnamon
Combine sugar and water in pan, stir in blended cornflour and lemon juice. Stir constantly over heat until mixture boils and thickens. Add blueberries, simmer few minutes. Add butter and cinnamon, stir over heat until butter is melted. Blend or process until smooth, strain, serve hot or cold.
Makes 1 ½ cups.
