Salmon Toasties and Avocado Directions
1633 kilojoules/ 390 calories per serving 2 x 210g (7oz) cans salmon, drained, bones removed 4 spring onions scallions, chopped 2 tblspn chopped fresh parsley Â½ red capsicum (pepper), seeded and finely chopped Â½ tspn cracked black pepper 1 tblspn freshly squeezed lemon juice 8 slices bread, crusts removed and toasted 8 coral lettuce leaves 1 lime, sliced 1 avocado, peeled, seeded and sliced
1. Combine salmon, spring onions, parsley, red capsicum, pepper and lemon juice in a medium bowl.
