Light Summer Salad with Tomato Dressing Directions
775 kilojoules/ 185 calories per serving 2 Spanish onions 2 green capsicum (pepper), seeded 125g (4oz) fennel 250g (Â½lb) zucchini (courgette) 8 tomatoes 1 stalk celery 2 avocados Spring of oregano for garnish TOMATO DRESSING 4 tomatoes, peeled and chopped 2 tblspn tomato puree Juice of 1 lemon 2 tblspn olive oil 1 tspn chopped fresh oregano 1 tspn chopped fresh thyme 2 cloves garlic, finely chopped
1. To make Tomato Dressing: Combine tomatoes, tomato puree and lemon juice in a bowl. Gradually whisk in oil, herbs and garlic. Cover, stand at room temperature for 1 hour.
2. Slice onions, capsicums and fennel into very thin rings. Place in a salad bowl. Finely slice zucchini, tomato, celery and avocado. Add to vegetables in salad bowl.
3. Pour over dressing and garnish with a sprig of oregano.
